tomatoes along with some chopped cabbage and you have a meal that the entire family
will enjoy. This soup can easily be made into a chicken or beef vegetable, or keep
it vegetarian for a healthy meal. This soup was named after Cooke Tavern's authentic
barn raising in May of 2004.

Candlelight Corn Chowder

Tavern guests were greeted by tempting aromas of hot chowders, stews and soups that
simmered by the hearth all day. Corn Chowder was a favorite dish among colonial travelers.
Imagine them dining on Candlelight Corn Chowder in tavern rooms with pewter spoons and
bowls, by candlelight. An easy to make 30 minute cream-based soup. The freeze-dried
corn tastes like it's fresh off the cobb. It is seasoned just the right amount of herbs & spices.
Chicken, turkey or seafood can be added to make a hearty chowder, which will serve 8
persons. Also great vegetarian style.

Colonial Broccoli Cheddar Chowder

Colonial taverns played an integral part of town life. Their patrons were from all walks
of life from lawyers to tradesmen. The taverns were often used as a gathering place to
transact business, talk politics, play cards, and gossip over a tankard of ale while
quenching their appetite on a hearty Chowder such as Colonial Broccoli Cheddar Chowder.
Colonial Broccoli Cheddar Chowder is the newest addition to our list of great soups!

Fireside Supper Bean Soup

In Colonial days, meals were prepared in iron kettles over the open hearth of the fireplace.
Wonderful soups, stews and chowders were always simmering ready to serve the weary travelers.

Ten Shilling Sherried Mushroom Soup

Colonial politicians, and the elite gathered at taverns to partake of elegant meals, sprits, gossip and
music. Many of the wealthy traveled to support their political concerns and land interests. Few
taverns would have been selected to accommodate the elite. If your tavern was chosen, special
meals would have been prepared to gain favor. The Cooke Tavern would have been chosen and
our Ten Shilling Sherried Mushroom Soup would have been selected as a prominent first course.

Need a gourmet touch to your meal? Our Ten Shilling Sherried Mushroom Soup is sure to bring you
rave reviews at your next dinner party! Freeze-dried mushrooms, wild rice and our unique blend

Blacksmith's Black Bean Chili

Many taverns had skilled blacksmith's living on site, due to the constant need for stage coach and
other repairs. The Tavern Blacksmiths would work long hours reparing coaches for the next days travel.
As you can imagine their appetites were quite hardy and the Blacksmith's Black Bean Chili became their
favorite hunger quenching meal. Cold winter nights call for some hot stuff, and our black bean chili
will fill the bill! Not too spicy - just a nice medium chili which you can spice up to be "anvil red"
if you like! This chili can be prepared vegetarian and served over rice. Leftovers make great burritos
& taco salads. Serves 8

Wagoners White Bean Chili

Upon arriving at the colonial taverns, the wagoners generally surrounded the fireplace to dry their
clothes and warm themselves. The wagoners had a hard job transporting goods and travelers while sitting
atop the stagecoaches. At the taverns, they demanded a hearty full meal - like our Wagoner's White Bean
Chili. This chili or stew would have been simmering all day in anticipation of their arrival. After dinner,
they would spread their bedrolls on the floor of the tavern room where they spent the night. Some folks
call this "chicken chili"! It has a southwestern flavor with no tomatoes or red meat. A great way to use
leftover chicken or turkey! The chili is medium spicy. Garnish this chili with a generous scoop of grated
cheese and you will have a wonderful tasty southwestern style treat. You can also cook this mixture down
in a crockpot, add some cheddar cheese and serve with tortilla chips as a warm dip. Serves 8.

Penns Pike Potato Leek Soup

Colonial travel required long hours on bumpy unpaved roads called turnpikes or pikes. Stagecoach owners
frequently contracted with tavern keepers for food and lodging along their journey. Passengers traveling
along Penns Pike were fortunate to find a grand owned by James Cooke Esq which offered fine soups, stews
as well as the finest rums and ales around. Penns Pike Potato Leek would have been a popular soup offered
by Mr. Cooke to his Colonial guests to make their long journey a bit more pleasant.
Penns Pike Potato Leek is a creamy potato soup flavored with leeks-good either hot or chilled. Add bits of
ham & bacon and top with your choice of grated cheese for different versions to suit your family's taste.
A fast & easy, ready in 30-minutes. Serves 8 people. Suggestions - don't want to cut up those potatoes?
We recommend substituting Oreida frozen potatoes in the recipe. They're easy and delicious.

Pioneer Split Pea Soup

Running a tavern was much like managing a home - only the tavern was nearly always crowded with travelers
coming or going. Tavern owners and their family members had to work hard at keeping it operating. They raised
animals, smoked their meats and grew fresh vegetables on site to supply the demands of the constant guests.
Pioneer Split Pea soup would have made a hearty meal offered to travelers. Tavern keepers would have prepared
this hearty soup from their own smoked hamhocks, fresh peas, carrots and potatoes.
Pioneer Split Pea is old-fashioned flavor with modem day ease of preparation. All you need to make this delicious
soup is a piece of ham or sausage, potatoes, and water. A smoked turkey leg can be substituted for the ham - and
it can also be made meatless. Customers who say they don't like split pea try ours & love it! One pot serves 8 people.
